Balsamic vinegar is the noblest fruit of an art as old as the world: that of knowing how to wait. At Acetaia Guerzoni we put the best organic and biodynamic grapes, the finest barrels, the most shrewd cooking, transfer and aging techniques. But time, that doesn't depend on us. We can only have patience.
The Traditional Balsamic of Modena D.O.P. extravecchio is a unique vinegar in the world because it is already organic and biodynamic despite over 25 years of aging.

Since its inception, Acetaia Guerzoni has chosen the biodynamic approach to agriculture. At the end of the seventies few talked about it and very few had the courage to apply it. A choice, ours, motivated by a deep love for the earth and for people: all of us who feed on the fruits of the earth.
