The Trebbiano grape is the most widely used variety in the Modena area for the production of Traditional Balsamic Vinegar of Modena PDO. This type of white grape is also grown in our vineyards, where it is fermented to produce vinegar without the use of sulfites. Wine vinegar is obtained through the action of live acetic bacteria, which transform the alcoholic component of wine by absorbing oxygen from the air. We do not pasteurize the product to preserve its vitality and aroma as much as possible.
Ideal for those who appreciate more acidic and strong products, its acidity of 6% makes it excellent for dressing salads. The white color makes the condiment hardly visible in the dish, giving an aroma that stands out especially to the taste and smell.
