Timilia durum wheat is an ancient short-cycle Sicilian wheat variety, it is sown in March and harvested in June. Goethe, after his "Journey to Sicily", wrote: "a kind of summer wheat that matures in three months (...), does not need a lot of water, but rather a lot of heat". It is recognized for its gray color and a toasted aroma, with notes reminiscent of almond and malt.
