For our pastas we use Ancient Grains, born from non-genetically modified seeds, of superior quality, highly digestible and rich in valuable nutrients. We follow a method of processing that is slow, artisanal and faithful to tradition: water from the Nebrodi Mountains, bronze drawing and slow, low temperature drying. Ours are rough, fragrant and tasty pastas.
Our island has always been considered the 'granary' of Italy, since the ancient Greeks. Russello durum wheat is one of the finest grains, it seems to be called so perhaps because of the red color of its very high ears.The flour of the old Russello wheat, being less refined, is excellent for the production of pasta like our n°5 spaghetti.
