Let's give time to time
Balsamic vinegar is the noblest fruit of an art as old as the world: that of knowing how to wait. At Acetaia Guerzoni we put the best organic and biodynamic grapes, the finest barrels, the most shrewd cooking, transfer and aging techniques. But time, that doesn't depend on us. We can only have patience. The Traditional Balsamic of Modena D.O.P. extra-old is a unique vinegar in the world because it is already organic and biodynamic despite over 25 years of aging.
Pioneers of organic and biodynamic agriculture
Pioneers of an alternative way of farming in Italy, we were among the first Italian farms to grow organic and biodynamic grapes and the first vinegar factory to produce organic and biodynamic Balsamic Vinegar of Modena. Suffice it to say that Acetaia Guerzoni has been certified as Demeter biodynamics since 1984.
The spearhead of our products is the Extra-old Traditional Balsamic Vinegar of Modena D.O.P.: a vinegar unique in the world because it is already organic and biodynamic despite over 25 years of aging.
We are first and foremost farmers - a word that for us represents a set of values - and farmers are also our partners, from whom we buy the grapes (all organic and biodynamic) that we cannot produce entirely from our land. With each of them we cultivate, often for decades, relationships based on trust and transparency, on love for the earth and for man, and on the care of what nourishes both.
Our first value is, in fact, the quality of our products, which must be much more than good and genuine: they must give us back the taste of a time when the field and the vineyard, the sun and the seasons dictated the rhythms of our lives.
Together with other farmers who share our values, we have created the Le Madri Foundation, an Italian reference point for biodynamic agriculture.
Our values
In the 1970s, the Guerzons asked themselves the same questions as the German farmers who, in the 1920s, asked Rudolf Steiner, founder of biodynamics: how can we improve the quality of agricultural products and obtain more genuine and more nutritious foods?
The reflections that underlie our history, combined with the teachings handed down from generation to generation, still underpin the values that proudly guide our productive and entrepreneurial choices.
Careful transformation
The processing processes are those refined by tradition: the must is cooked over direct heat and the fermentations are slow, with mother of vinegar or self-produced GMO-free ferments. In this way the product is enriched with scents and flavors, yeasts and probiotic bacteria.
