We are stubborn, against every entrepreneurial rule we have a largely biological supply chain (Bioagricert), certain that the world can change starting from our tables. We are traditionalists, we only work with natural stone grinds. We are purists, in order not to use chemicals we store flour and other products in cold rooms at controlled temperature and humidity.
