Our company, since 1906, the year of its foundation, has been operating in the cereal sector, a raw material that has always been one of the main food resources in Valtellina.
We are especially known for pizzoccheri and polenta flours, and identified as one of the most representative companies of Valtellina food and wine.
Pizzoccheri, rustic tagliatelle prepared with buckwheat flour, are the typical dish of local cuisine. His father Luigi Sala, in 1969, patented the production of the typical dried noodle, allowing its long preservation and tasting even in the most distant places. In the following years, numerous formats and types of pasta were created, using the characteristic ingredients of the Valtellina territory, such as buckwheat, rye, berries, strained wine and chestnuts.
Flours are our flagship, they are still processed in the traditional way, leaving intact the nutritional properties of the cereal and that particular taste that modern industrial grinding processes have eliminated.
Cereals and legumes are selected with extreme care in the choice of agricultural products and special attention to all stages of production and packaging, obtaining a high quality product.
Our line of local products marked by the Il Saraceno brand takes its name from buckwheat. For years we have been researching, selecting and supporting the best Valtellina productions, produced exclusively by artisans who, with their work, continue to safeguard the heritage of the food traditions of the valley.
Sweets, honey, aromatic herbs, berries, mushrooms, wine and other selected raw materials, are processed with the utmost attention in compliance with traditional recipes.
